Is it ok to apply in December?

I am applying for a Global Talent visa from the US. In the US there is a limit to the number of visas granted annually. Some think it is best to wait until January to apply, and to avoid December.

Does anyone have any insight into this regarding the timing of UK Global Talent application?

I believe Global Talent endorsements actually reset every April, so it should not be an issue, especially since it takes time after the endorsement to officially get the visa. However, if you have not applied yet you will likely not get an endorsement decision until January, as the holidays are coming up and employees are likely to be off work.

There’s no stated timing anywhere. Applications are reviewed all year round.

does that mean as I have applied in December I can start my count down, without skipping the Christmas breaks in between?

You are likely to get an outcome in January. I got my endorsement on the 4th of January.
