Hi, It looks like the endorsing body is changing for the global talent visa. Should I wait for the update on the new endorsing body for new rules or start the documentation right away? Look forward to your response.

it might take time minimum another 3 months I guess, if your ready with current endorsing body you can go-ahead they might continue to accept applications after March 31st also as per their latest news.

You can start your documentation right away and might be lucky to have it submitted before a new endorsing body is announced.
