My 2 cents on your OC1 - 6,7,8 which to me looks like the same company and product you are referring to.
Per my understanding and talking to people on the forum, you need to show different innovations in supporting docs. 6,7,8 are not 3 innovations but actually 1.

Document 5: Fundraising industry press release launch on startup 2 from 20 major websites in 2021 to demonstrate company’s visibility and impact in the industry… I also talk about the products Unique features and functionality in the document.
Document 6: Shows my involvement in driving innovation. - i included Screenshots of the digital product(s) [Dashboard screenshot of product in startup 1 & Playstore screen for App in startup 2] as highlighted and put in Document 6 to show evidence of product development. I also explained core features and my contributions to customer and revenue impact.
Document 7: Captures articles of association and shareholding documents both captured here to prove company ownership 1
Document 8: Captures newpaper articles from popular Tech blogs on startup one with articles like. “List of foremost Nigerian startups in Nigeria” startup 1 is mentioned here, another article: “5 startups to watch in Nigeria in 2021” startup 1 is mentioned here. another article: “12 Nigerian startups to watch out for” startup 1 is also mentioned here.
As a business applicant, my impression would be that you need to show traction in terms of numbers - revenue (especially), funding, market penetration etc. I don’t see those emphasized much.
As expressed by others about the challenges surrounding proving Innovation as a business applicant, it may be better to merge up some of the related documents in OC1 and move all the current OC1 into OC3. Then, use item 1, 2, 3 and perhaps, 4 again as OC2 (yes, OC2 - contributions outside normal work).

I have evidence of speaking at a high-profile specialist event for my particular field in the digital technology sector as evidenced via [a speaker certificate + event invitation letter + event flyer showing me as a speaker]… will that be okay for this criteria? Note: Do i still need a reference letter? Though I have requested but this is taking quite a while to come forth.
Can Document 6 + I still have a one more of Recommendation letter from a leading industry expert describing my work in the logistics-tech through my startups. would that pull through here?

Could Document 7 & 8 merging to one document capture OC3 on its criteria [demonstrate that I have made a significant entrepreneurial contributions to the field having founded a successful product-led digital technology company and leading it as evidenced by article of association, shareholding & newspaper articles??? . Making it 4 documents for OC3
I wouldn’t as much totally move the old MC to OC2, rather I would use them in addition to any new evidences.
So, like I suggested earlier, the previous MC documents are also suitable for OC2. In case, you have new MC support, just include them to the already existing MC.
I concur that 7+8 can go together. Perhaps, you can also look at how 6 + 10 can work together.
